Got ripe bananas?
Either I freeze the bananas for smoothies or use it to bake up some banana bread! In this case I found an recipe using up those ripe bananas but to make jumbo banana muffins! What caught my eye was seeing the recipe used sprinkles to spice up the banana muffins! Of course I had to try this recipe out — who doesn’t like sprinkles?! It’s just so colorful! Great for presentation too. Anyways, this recipe was easy to follow and the results came out pretty good! I wished I had the same type of sprinkles on hand like the recipe but I just used what I had at home. For some of the ingredients I changed it a bit. - 2 ripe bananas (mashed)
- 3 tbsp butter (melted) or (substitute with melted coconut oil can work too)
- 1 egg
- 1/2 cup of milk (regular/soy/almond/etc.)
- 1/2 teaspoon vanilla
- 1/3 cup sugar + 2 tbsp to sprinkle on top
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 1/3 cups white whole wheat flour (I used gluten free 1-1 baking flour)
- 1 1/2 tbsp sprinkles (jimmy sprinkles) + 1tbsp to sprinkle on top (I used the sprinkles I had at home)
Preheat the oven 375F degrees. Spray 6 jumbo muffin tins with coconut oil spray (or any non-stick spray). Or line with baking cups if you have it and set it aside for now.
In a large mixing bowl mashed the 2 ripe bananas with the whisk, add 3 tbsp melted butter, egg, 1/2 cup of milk, 1/2 tsp vanilla and mix it throughly.
Add 1/3 cup of sugar and whisk it till combined.
Add 1 1/3 cup flour of choice (I used gluten free) along with the 1/4 tsp baking soda, 1 tsp baking powder, and whisk till combined.
Add the 1 tbsp sprinkle of your choice and gently mix it but don’t over do it.
Divide the batter evenly into 6 jumbo size muffin tins. Mix the 2 tbsp of sugar and 1 tbsp of sprinkles together.
Sprinkle the sugar/sprinkle topping on top of each batter. Make sure to sprinkle it evenly and not just in one spot.
Set your timer for 20 minutes and bake the muffins.
Once the muffins come out of the oven, used a toothpick to check if the muffins are done baking, if the toothpick comes out clean your good to go! Let it cool in the muffin tin for a bit before removing it and placing it onto a wired rack to fully cool.

Time to enjoy these yummies! Paired nicely with a glass of milk of your choice.
